This vegan St Clements cake with turmeric is easy to make, light and zesty, and a brilliant shade of yellow.
Turmeric is one of those superfoods that’s everywhere these days. It’s credited with a long list of medicinal benefits including preventing heart disease and improving irritable bowel syndrome. The culinary beauty of it is that it has an interesting, versatile, woody flavour and turns your food the heartwarming colour of sunflowers.
If you’re only familiar with the flavour of turmeric in savoury Indian and Middle Eastern dishes, and aren’t convinced by the concept of turmeric cake, this recipe is a perfect introduction. The turmeric is a mild aromatic backdrop to the much more prominent flavours of orange and lemon.
Ground almonds and olive oil produce a light, moist texture, and a richness that means this is a cake that really needs only a dusting of icing sugar to complete it.

ingredients
- 200 g plain white/unbleached flour
- 80 g ground almonds
- 1.5 tsp baking powder
- 0.5 tsp bicarbonate of soda
- 1 tsp ground turmeric
- 70 g white or golden sugar
- zest of one medium unwaxed lemon plus one tbsp juice
- zest of one medium unwaxed orange
- 150 ml soya (or other non-dairy) yoghurt
- 50 ml light olive oil
- icing sugar for dusting
method
- Set the oven to 180°C/360°F and lightly oil and line the base of an 8″ or similar sized tin.
- Sift the flour, baking powder, bicarbonate of soda and turmeric into a large bowl.
- Stir the ground almonds and sugar into the flour mixture, followed by the orange and lemon zest.
- In a separate jug or bowl, whisk together the oil, yoghurt, lemon juice and two tablespoons of water.
- Pour the liquids into the flour mixture and stir lightly until combined. Don’t over-stir.
- Transfer the mixture to the tin, level, and bake for 35 to 40 minutes, until the cake is risen, a rich golden brown colour and firm in the centre.
- Allow the cake to cool before removing from the tin and dusting with icing sugar.
