These vegan hazelnut milk brownies are really a kind of tribute, in brownie form, to the fabulous Vego chocolate bars. They are rich and dense, and largely composed of chocolate and hazelnuts.
Other ingredients are kept to a minimum so as not to distract from the hazelnut chocolate flavour. The cake itself features roasted hazelnuts blended to a cream with oat milk, and the top is decorated with whole hazelnuts.
Use a dark chocolate with a cocoa content lower than 70% if possible, as the darker chocolates can overwhelm other ingredients, and hazelnuts have quite a gentle flavour.
This is a cake that needs to be left to settle (unless you plan to eat it with a spoon!). Ideally, chill it in the fridge for several hours before cutting. You can bring it back up to room temperature once it’s cut into squares.

- 80 g roasted chopped hazelnuts
- 160 g oat (or other non-dairy) milk
- 145 g dark chocolate
- 35 g vegan margarine
- 35 g golden syrup
- 80 g self-raising flour
- 1/4 tsp baking powder
- 80 g light brown sugar
- 40 g whole hazelnuts
method
- Set the oven to 180°C/360°F and lightly oil/line an 8″ (20 cm) baking tin suitable for brownies.
- Blend the roasted chopped hazelnuts and oat milk together until they form a smooth cream.
- Melt the chocolate in a large bowl together with the margarine and golden syrup. If you are using the microwave, do this gradually on a low heat, stopping to stir the ingredients at regular intervals.
- Add the hazelnut milk mixture to the melted chocolate mixture and stir well.
- Add the sugar, and then sift in the flour and baking powder. Stir until thoroughly combined and smooth.
- Transfer the mixture (which will be quite runny) to the baking tin and drop the whole hazelnuts, fairly evenly, across the top.
- Bake for around twenty minutes, until the edges are just beginning to turn darker.
- Allow the brownies to cool completely, and ideally chill overnight, before cutting with a sharp, smooth-edged knife. Rinse the knife in boiling water before each cut if you want to achieve really clean edges.
